Yesterday's eats - Thanks to WWCalc and Philbo )

Going to try this for tonight, if all goes well:

Mexican Casserole

Serves 6

The Filling:


  • 2 green peppers, diced

  • 2 garlic cloves, crushed

  • 1 medium onion, chopped

  • 1 can (28 oz.) diced tomatoes (I prefer the Muir Glen brand)

  • 1 1/2 cups frozen corn

  • 2 cans kidney beans (3 cups)

  • 2 T chipotle en adobo paste (Canned chile chipotles / and puree in the blender. It stays good in the fridge for several weeks, or in the freezer for at least 6 months)


The Crust

  • 1 tablespoon flour

  • 3/4 cup cornmeal

  • 1/2 teaspoon salt

  • 2 teaspoons baking powder

  • 1 egg, beaten

  • 6 tablespoons milk, (I'll use 1%)

  • 1 tablespoon corn oil

  • 3 ounces cheddar cheese

  • 3 tbsp chopped green Mexican chilies


Preheat the oven to 425. Sautee the onions with the green pepper until the onion starts to color, about five minutes. Pour in the rest of the filling ingredients, and simmer for 10 minutes, while you make the crust.

Mix the flour, cornmeal, flour, salt, and baking powder together in a medium sized bowl. Mix together the milk, egg and corn oil, and add to the cornmeal mixture, and stir until it comes together. Fold in the chilies, and half of the cheese.

Pour the filling in a medium casserole dish, and spoon the topping over the top. Sprinkle on the remaining cheese.

Bake for 25-30 minutes, or until the top is set, and the cheese has turned golden.

Calories 344, 9g Fat, 10g Fiber. Points per serving: 7

Newt likes the smell of olives, and will sniff at and lick my fingers if I've been eating them. I wonder what aspect of the brine appeals to him? I'm guessing it's the salt.

It's a real shame that WW stomped on WWCalc. Fortunately, a nice Google search will bring it up for you pretty easily. (if you want points list for all sorts of places, this is the place to go), though I uses these databases for the palm.

I see a fellow by the name of Adam is working on a multiplayer zombie game... he's working on the "zombie flocking algorithms" now. Now, *there's* a project I'd like to get in on, even if it's only the play testing. I've written him an email, just now, to see if I can get in on that action.

Major Power outage over the northeast.

The power is starting to come back up. Cleveland, New York City, Ottawa, Toronto, Boston, Detroit... many more affected. People trapped in subway cars, transformer fire(s) reported, airports and railroads shutdown, buildings being evacuated.

Only 3/4 cup of cereal is going to take some getting used to. I can do it, but I *really* want to gobble more up. After I polish off the junky cereals, maybe I'll go back to Total Corn Flakes, fo rthat fuller feel.
