Going to try this for tonight, if all goes well:

Mexican Casserole

Serves 6

The Filling:


  • 2 green peppers, diced

  • 2 garlic cloves, crushed

  • 1 medium onion, chopped

  • 1 can (28 oz.) diced tomatoes (I prefer the Muir Glen brand)

  • 1 1/2 cups frozen corn

  • 2 cans kidney beans (3 cups)

  • 2 T chipotle en adobo paste (Canned chile chipotles / and puree in the blender. It stays good in the fridge for several weeks, or in the freezer for at least 6 months)


The Crust

  • 1 tablespoon flour

  • 3/4 cup cornmeal

  • 1/2 teaspoon salt

  • 2 teaspoons baking powder

  • 1 egg, beaten

  • 6 tablespoons milk, (I'll use 1%)

  • 1 tablespoon corn oil

  • 3 ounces cheddar cheese

  • 3 tbsp chopped green Mexican chilies


Preheat the oven to 425. Sautee the onions with the green pepper until the onion starts to color, about five minutes. Pour in the rest of the filling ingredients, and simmer for 10 minutes, while you make the crust.

Mix the flour, cornmeal, flour, salt, and baking powder together in a medium sized bowl. Mix together the milk, egg and corn oil, and add to the cornmeal mixture, and stir until it comes together. Fold in the chilies, and half of the cheese.

Pour the filling in a medium casserole dish, and spoon the topping over the top. Sprinkle on the remaining cheese.

Bake for 25-30 minutes, or until the top is set, and the cheese has turned golden.

Calories 344, 9g Fat, 10g Fiber. Points per serving: 7

Yup.. I 've got some palm software and keeping the points thing on my own... I don't do the meetings or any of that.

I've only been at it for about a week, but I think the system looks good.

I've been doing this for a week as of today. I want your points range! I'm stuck in 22-27 land. My friend Holly is doing gangbusters on WW - she's my inspiration (so far, she's down, like, 40 pounds!)
