I stuff them with eggplant sauteed with cinnamon (tastes like Greek Moussaka a bit) or veggie crumble, rice and cheese OR my newest invention re-fried beans and rice! So---C'mon!

The veggie, rice and cheese sounds scrummy. So does the beans and rice.

There is an Indian resturant here in my town that serves them filled with spices and very very finely diced beef, and it is to die for. In fact, this is making me hungry!

Well believe it or not if you saute the eggplant with garlic, onion and a touch of cinnamon and salt and mix with with rice it tastes just like beef. Eggplant is like tofu sometimes it take son the flavor that you cook it with so I've been using it as a beef substitute for a while now (especially since we have BUMPER crops of it)---BUT you have to use the small tender eggplant or the Japanese style ones they are more tender!

Now I'm getting hungry too!

those look amazing. my grandma used to make eggplant salad by roasting eggplants and peppers and peeling and mashing them with a little garlic and olive oil and salt and pepper. YUM

i yearn for a real veggie garden....I live in NYC, so gardening space is spars, but there are some really cute community gardens.
