Beware the ides of January! Oh, how it snowed today! It went for a brief period, stopped, and then came back, all crazy-like.

I heard that it wasn't going to stick, but it was pretty white out there for a little bit. If it had done its drop after dark, I'd wager there'd have been less sublimation.



Veggie Meatloaf for dinner tonight... nom nom nom.

I'm glad that BHK doesn't mind my meat-free ways! Larry opted for a fried chicken tv dinner, but Chris was game. I have enough to bring a goodly does for lunch tomorrow, too - with plenty of mixed veggies and peas on the side.

VIENNA, Austria - A chimpanzee cannot be declared a person, Austria's Supreme Court has ruled, activists said Tuesday.


An animal rights group had sought to have the chimp, Matthew Hiasl Pan, declared a person in hopes of gaining guardianship of the animal.


The shelter where Matthew has lived for 25 years is going bankrupt, threatening to leave him homeless. Donors have offered to help support him, but under Austrian law, only a person can receive personal gifts.


The Vienna-based Association Against Animal Factories sought to have him declared a person and petitioned to be appointed Matthew's trustee.


But the high court upheld a September ruling by a judge in the town of Wiener Neustadt rejecting the petition, the group said Tuesday.


The rights group said it would take the case to the European Court of Human Rights.


Matthew and another chimp at the shelter, Rosi, were captured as babies in Sierra Leone in 1982 and smuggled to Austria for use in pharmaceutical experiments. Customs officers intercepted the shipment and turned the chimps over to the shelter.


Organizers said they may set up a foundation to collect donations for Matthew, whose life expectancy in captivity is about 60 years.


But they argue that only personhood will ensure that he isn't sold outside Austria.

My mom used to get so irritated because I confused Baretta and Columbo. She had this huge crush on Baretta and was flummoxed that I could possible get them mixy.

I wonder what it would take to keep Matthew in the kind of surroundings he needs. It's terrible to think he would be sold into yet another bad situation. Hopefully those who would help him will open a new shelter. Or put new management in the current one.

What's in veggie meatloaf? We've cut down on meat and miss the textures/flavors of some dishes like meat balls/loaf. Mind sharing your recipe?

I'm still perfecting the meatloaf. But I think if you like stuffed peppers it'd be perfect filling for them!

I mix I can of canned veggie burger (Worthington's brand--I get it at Safeway) with a cooked box of rice a roni or any instant rice with flavor. I usually pick veggie or cheese flavor (just make sure there is no meat stock in the flavouring).
I add a half can of tomato sauce, pepper, onion powder, garlic powder and last night I added bread crumbs and 2 eggs.

And I mix by hand---cause really its the only way to mix meatloaf or meatballs.

If you make loaf use a loaf pan sprays with non-stick and top the loaf with the rest of the tomato sauce or catsup or both! Cook 425 for 45 minutes. If it doens't cool completely it won't slice like meatloaf so if you eat it hot be prepared for it to crumble a bit. I'm still working on my meatloaf technique--changing the recipe each time to perfect it.

If you stuff peppers (really the best use of this recipe) add the tomato sauce and some spaghetti sauce together and pour over peppers in a casserole pan enough to cover moderately. And as with everything I bake 425 for about 45 minutes or until its done.

Usually I make up recipes so they aren't at all strict measurements or cooking times. My default setting is 425 and cook unitl it smells done (until the smell fills the house or kitchen) and I add spices to taste starting with a big pinch first.

You can also try a mexican bake----they are one of Scott's favorite! I use corn tortillas instead of lasangna noodles and layer with refried beans, black beans, cheese, mole, taco sauce or green tomatillo sauce---whatever is in the cupboard---great way to clean out the fridge/cupboard. I bake the whole thing at 425 for 45 minutes and Scott loves it. As usual it serves up better the second day after its cooled---perfect for lunches!

Oh in the mexican bake---I also use veggie crumbles!

I find if you miss the texture of meat you can put veggie substitutes in casseroles and they taste as if they are meat-meat.

My other trick is to soak tofu in pickle brine (from the pickle jar) when making chicken fried tofu---it gives it that "meaty" salty taste.

I'm still working on the perfect vegetarian dish that will fool my meat and potatoes dad. So far I've only gotten him to try the Mexican bake and veggie crumble lasangna and fooled him. Cause even though we are mostly veggie in our house I still miss my meat sometimes! :D

This sounds great! Thanks for sharing it. I'm trying to cut out as much meat as possible. I got the "I'm very disappointed in you" look from my son as he held up a pack of bacon out of the groceries and accused me with it. But we're getting better!

Veggie burger in a can. I've seen veggie burger patties in the freezer section. Our local places carry tofu blocks but the other I haven't seen. Is it like tofu but "textured" or something? Probably need to check out Kroger again. Haven't been there for a while. Might get lucky. We have Kroger, Walmart and Foodfair. Not a big selection to say the least.

Chicken fried tofu sounds really good. Does it do well as a sort of chicken fingers substitute? My kids miss that stuff. Younger son really misses fish sticks too!

Changing recipes as you go is exactly what I do too. No other way to get what you want if you don't want to buy ready made stuff. The Mexican bake sounds like something we'd definitely try. Thanks again!

This is the veggie in a can stuff I use. Not bad. Now the country fried tofu I make is really no substitute for chicken fingers. I use that ol' white and gelatin-y tofu so its very tofu-y. Morningstar farms however makes some buffalo chicken drumsticks that are a fine sub for chicken fingers. (And there are some from a can too but I usually put them in a gravy ala stroganoff because they are a bit salty).
