Recipe for Curry and cabbage soup: All measurements approx. since I pretty much cook without measuring.

*2 boxes of veg stock (fill 1 box with water and add that to pot as well)
*chopped cabbage 1 large head
*minced green pepper
*3-4 large grated carrots
*1 package firm tofu
*1 can coconut milk
*1 1/2 teaspoon red curry spice
* splash of white vinegar

In large pot bring veg stock, water, carrots, green pepper to a boil.

Add red curry and vinegar then cabbage to boiling soup mix and simmer until cabbage is translucent (cooked). About 20-30 min.

Add tofu and coconut milk and let simmer for another 10 minutes.

Serves 1 hungry husband 6 or 7 times over. :D
